I’m not normally a salad eater. Unless it’s a really creative salad. If it’s something a little bit out of the ordinary with a delicious dressing then I can devour it. So the other day I decided to make a salad to serve alongside some turkey burgers for dinner since I am trying to get my family to eat more vegetables, and I came up with this raw broccoli salad. I hada bunch of broccoli that needed to be used and I made a coleslaw-like dressing to serve with it. It’s definitely got some crunch to it, the dressing is slightly sweet and slightly tangy, oh and did I mention the salad has bacon in it? It also has raisins – which you can omit if someone doesn’t like raisins, but I thought they would go well with the salad. KB even ate a bunch of it before he realized there were raisins in it (he’s not fond of raisins).
Anyways, this recipe is super easy – just make the dressing and chop the veggies and you’re golden.
In a medium bowl, add mayonnaise, sugar, vinegar, salt and pepper.
Add broccoli, bacon, cheese, onions, sliced almonds, and raisins to the same bowl on top of the dressing.
Mix well to combine.
3/4 cup mayonnaise
1/4 cup sugar
3 Tablespoons apple cider vinegar (I actually used a jalepeno – white balsamic vinegar so this is interchangeable)
salt and pepper to taste
3 cups broccoli florets – cut into bite sized pieces
1/2 cup diced cheddar cheese
1/2 cup sweet white onion – diced
1/4 cup sliced almonds
5 slices bacon – crispy and crumbled
1/3 cup raisins (can be omitted)
Mix the mayonnaise, sugar, vinegar, salt and pepper in a medium bowl. Add broccoli, cheese, onion, almonds, bacon and raisins. Mix well to combine.
