Chili – Lime Jicima

So here’s something you might find funny…I’m eating clean for a few weeks thanks to my friend from grade school, Ryann.   And since I am, I thought I would come up with some healthy and clean snacks to add to my repertoire.

Remember how I told you that KB and I love travelling to Mexico?  So it makes sense that this lovely little snack would happen to be a Mexican turnip.  I had it often when I was growing up, my dad would come home with this big ugly looking root.  But it tasted so sweet and so fresh inside, that how could you NOT like it?

The texture is that of a raw potato or a pear and it can be used in many other ways – think salads or stir fries.  Heck, you could even make chips out if it if that’s your thing.  Just slice thin and bake in the oven.

Anyways, peel it and it looks like this.


Cut it into sticks, or chips and add a sprinkle of chili powder, some lime juice.



And you have a fabulous snack!  With very few calories and a lot of crunch!

1 jicima root
1/2 teaspoon chili powder
juice of 1 lime

Peel the jicima root.  Slice or cut into chips.  Sprinkle with chili powder and lime juice.
