Watermelon – Feta Salad

I think Watermelon is one of those fruits that is best eaten cold.   And before it becomes mushy.  If you’ve never sprinkled salt on ice-cold watermelon, you’re missing out!  You absolutely MUST try it.  I know it sounds weird, but it’s divine!  With that in mind, when one of my very favorite aunties texted me that she had a recipe for a watermelon-feta salad, I knew I wanted the recipe.  I thought it sounded like the perfect summer salad – one that everyone (even KB) would like.  And since her sister, my momma, is in town for a month we made this salad and LOVED it!

Of course this recipe is super simple too – just cut everything up and serve!  It calls for jalepeno too – which makes it a little spicy, but you can omit that if you want.

In a medium mixing bowl, mix watermelon, cucumber, diced jalepenos and green onions and vinegar and sprinkle with sea salt.  The original recipe called for some mint, but I didn’t have any on hand and didn’t miss it.


Mix to combine.


Scatter prosciutto and feta cheese over top of salad.  Add freshly cracked pepper to taste.


Serve and enjoy!



8 cups seeded, cubed watermelon
1 cucumber, diced
6 green onions, diced
1 jalepeno, seeded and minced
2 Tablespoons rice vinegar
sea salt – to taste
4-6 slices prosciutto, sliced thin
6 oz feta cheese
cracked black pepper – to taste
**optional 6 mint leaves minced

Combine watermelon, cucumber, green onions, jalepeno, rice vinegar and sea salt in a bowl.  Mix to combine.  Sprinkle prosciutto, feta cheese and freshly cracked black pepper over top.  Serve and enjoy!
