It’s usually when I find the most random ingredients in my fridge that I need to use up that I come up with a recipe that I can get even the pickiest of tiny humans to eat. OK, so maybe I cheated a little bit with this one by wrapping it in a crescent roll, but it still worked and I did get TAB to eat spinach…which she normally wouldn’t do willingly and without a bunch of cheese.
Anyways, the other day I had a bag of baby spinach to use up and some feta cheese. And since I know those are the primary ingredients in spanakopita, I decided to whip up some spinach and feta crescent rolls. Super quick, super easy and a good side dish for any meal.
Start by sauteing an onion in some olive oil.
Add spinach. Cook until wilted.
Remove from heat and let cool slightly.
Add feta cheese.
Wrap about 2 Tablespoons in crescent roll dough.
Place on a greased baking sheet. Bake at 375 degrees for about 12-15 minutes (until golden brown).
Serve and enjoy!
1 medium onion, diced
2 Tablespoons olive oil
1 – 16 oz bag of baby spinach
4 oz feta cheese, crumbled
1 tube of crescent rolls
Saute onions in olive oil. Add spinach and cook until wilted. Remove from heat and let cool slightly. Add feta cheese and mix to combine. Meanwhile, lay out crescent roll dough.
