I love making oven-roasted vegetables. It takes away all the active cooking time. I don’t have to stand at the stove and babysit my vegetables. And sometimes that’s what makes all the difference during weeknight cooking. It’s really easy to just throw some veggies on a sheet pan, drizzle with olive oil, add seasoning (salt and pepper) and throw in the oven for about 25 minutes and voila…done and done!
It’s also somewhat easier to get my children to eat them. Especially when I add some sort of cheese into the mix. They absolutely love oven roasted vegetables with parmesan cheese. Anyways, the other day, I had a bag of haricot vert. That’s just a fancy word for green beans. I like to use fancy words for vegetables. It always makes me feel just a little bit more grown up. Especially since there are days I feel like I am just posing as an adult.
Start by spreading your green beans out on a sheet tray. Drizzle with olive oil, sprinkle with salt and pepper. Roast in a 375 degree oven for about 25 minutes.
Sprinkle with parmesan cheese. Return to oven for about 5 more minutes. Serve and enjoy!

1/2 cup parmesan cheese
Lay green beans on a sheet tray covered with aluminum foil. Drizzle with olive oil and sprinkle with salt and pepper. Place into a 375 degree oven and let roast for about 25 minutes. Remove from oven and sprinkle with parmesan cheese. Return to oven for about 5 minutes until cheese melts. Serve and enjoy!
