Guacamole Brown Rice

Rice is like a blank canvas.  It’s starchy and filling, but can taste like nothing.  Of course there are many different variations of rice.  One of my favorites happens to be brown rice.  It’s even a little healthier for you than regular white rice – it’s the unrefined version of white rice and contains much more fiber, promoting weight loss.  It’s also considered a whole grain (since it hasn’t been refined) and is rich in antioxidants.

So the other day, I was making a variation on my salsa chicken and decided I would serve it with guacamole rice.  Who doesn’t like guacamole?  Mix it with some brown rice for a side dish with a little Mexican flair and you have a delicious and filling meal!

Start by mixing together some guacamole ingredients.  You can add anything here – depending on what you like in your guacamole.  I used an avocado, onion, jalepeno, cilantro, lime juice, and a little salt.


Mix to combine.


Add your cooked brown rice.


Serve and enjoy!



2 ripe avocados, mashed
1 small onion, diced
1 jalepeno, seeded and diced
1/2 cup cilantro, chopped
1-2 Tablespoons lime juice
1 teaspoon salt
3 cups cooked brown rice

Mix together your avocado, onion, jalepeno, cilantro, lime juice and salt until thoroughly combined.  Add cooked brown rice and stir to combine.
