Sometimes I like to take something from a can and make it fancy. Let’s face it, it’s just plain easy to open a can sometimes when you need a side dish for lunch or dinner, but sometimes, that can just isn’t enough. Which is when it’s time to make it fancy! Now of course my idea of fancy usually involves bacon, onions and some sort of spice or seasoning. Because everything is better with bacon. I mean everything. And sometimes, when I’m looking for a side dish and I can tell the kids it has bacon in it, I’m guaranteed they’ll at least try it.
Anyways, the other day I made some Cuban pork in the crockpot. And I needed a side dish. So I decided to make fancy black beans. With bacon. And it was quick, easy, and delicious! And kind of like pork and beans without all the sugar. Needless to say we had some clean plate club members!
Start by cooking your bacon in a medium sized pot over medium heat.
It needs to be cooked rather crispy because once you add the beans, the bacon magic is done! Add the onions and cook until the bacon is done and the onions have soaked up some of that goodness. It will probably take about 10 minutes to do this.
Then add a can of black beans (drained) and cumin.
Simmer for about 30-45 minutes over low heat.
Serve and enjoy!
3 strips of bacon, diced
1 medium onion, diced
1 – 14.5 oz can black beans, drained
1 Tablespoon cumin
Cook bacon in a medium pot over medium heat. Add onion and continue to cook for about 7-10 minutes until the bacon is crispy and the onion is cooked through. Add drained black beans and cumin. Simmer over low heat for about 30-45 minutes. Serve and enjoy!
