Country Potato Salad

Potato salad is one of those side dishes that can either be hit or miss.  I don’t normally make potato salad for my family for that very reason.  I think also because it’s normally a side I would make for a barbecue or during the summer for a picnic.  I don’t normally think to make it during the winter or fall, but I guess I could always try and change that.  At any rate, potato salad is a good side dish to add whatever you like to it and leave out whatever you don’t like.  Basically, the potatoes and the dressing are a blank canvas for other ingredients.  And to me, that blank canvas is never complete without bacon.  So you will usually never see me make a potato salad or a pasta salad without bacon.

So I’m not really sure why I called this potato salad “Country Potato Salad.”  I was just looking for a catchy name for it so I didn’t have to just call it potato salad.  But it does seem like something that would be made in the “country.”  Or served at a picnic in the “country.”  Anyways, my take on Country Potato Salad includes boiled potatoes, hard boiled eggs, bacon, some veggies and a creamy dressing to tie it all together.  Here’s what I did.

Start by mixing the dressing ingredients together in a large bowl: mayonnaise, dijon mustard, apple cider vinegar, sugar, garlic salt and pepper.

Whisk until smooth.

Add onions, celery, pickles.

Then add potatoes, hard boiled eggs and bacon.

Mix together well so dressing coats the entire salad.

Sprinkle with paprika.

Serve and enjoy!

Recipe:

3 lbs boiled potatoes (yukon gold or any other type), peeled and diced
6 hard boiled eggs, peeled and diced
6-8 strips of bacon, diced and fried until crispy
1 small sweet onion, diced
1/4 cup diced pickles (or pickle relish)
2-3 ribs celery, diced
1 cup mayonnaise
1/4 cup dijon mustard
2-3 Tablespoons apple cider vinegar
3 teaspoons sugar
1/2 teaspoon garlic salt
1/2 teaspoon cracked black pepper
sprinkle of paprika

In a large bowl, mix the dressing ingredients: mayonnaise, dijon mustard, apple cider vinegar, sugar, garlic salt and black pepper.  Whisk until dressing is smooth.  Add onion, celery and pickles.  Add the potatoes, eggs and bacon.  Mix well until the salad is coated with dressing.  Sprinkle with paprika.  Serve and enjoy!
