Who doesn’t love bacon? And caramelized onions? I can’t say there’s ever been a time when I’ve turned down either of the two. Or both together. One time I felt like I had put bacon in every meal in one day and I thought to steer away from bacon in dinner, but KB reminded me, when have you ever avoided bacon? And he’s right. So we had bacon in every meal that day. Who cares?
The other day I was making BBQ ribs for dinner and I decided to make some jazzed up cornbread with bacon and caramelized onions. Of course it went over well when I served it with butter and drizzled it with honey. Who wouldn’t love a piece of that? Since there’s just 4 of us, we couldn’t finish the whole pan for dinner, but you better believe it was just as delicious the next day warmed up!
Start with bacon – dice it and crisp it in a pan. Remove it from the pan and place on a paper towel to drain the fat.
Then add your onions to the bacon grease.
Cook over medium heat for about 7-10 minutes until caramelized.
Meanwhile – put your dry ingredients in a bowl and whisk together: cornmeal, flour, baking powder, baking soda, pepper and sugar.
Add your wet ingredients: buttermilk, eggs, melted butter, and honey.
Mix to combine. Then add your bacon, onions and cheese.
Spread into an 8 x 8 square pan that has been sprayed with non-stick spray.
Bake at 400 degrees for about 25 minutes until the center is done and a toothpick comes out clean.
4 strips bacon
1/2 medium onion, diced
2/3 cup shredded cheddar cheese
1 and 3/4 cup cornmeal
1/2 cup flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon pepper
1 Tablespoon sugar
1 and 1/2 cup buttermilk
4 Tablespoons melted butter
2 Tablespoons honey
