I’m always looking for ways to get my family to eat veggies. I love veggies myself and try to incorporate them into our diets as much as possible. Unfortunately, with tiny humans, sometimes its a challenge. Which is when I resort to cream and cheese. Or cream cheese. Yes, it might add some unwanted fat and calories. But if it makes the veggies more palatable to a picky eater, then why not?
Spinach is one of the healthiest foods. It contains good amounts of vitamins C, K and A as well as potassium and iron. And the list goes on. The thing about spinach is that not everyone likes it. Popeye did. But my kids don’t know Popeye. So it would be hard for me to say, “Eat your spinach so you grow nice and strong like Popeye.”
So the other day I had a bunch of spinach that needed to be used. And I threw together a 3 ingredient creamed spinach. You could make it with 2 ingredients if you omitted the onions, but I like putting onions in there for a little bit of a different dimension. I would definitely say that it was a hit. We finished the entire pan!
Start by sauteing onions in olive oil.
Add spinach and wilt.
Add whipped cream cheese. All I had was the kind with chives, so that’s what I used.
Let the cream cheese melt and incorporate with the spinach until warm and bubbly.
Serve and enjoy!
1 medium onion, sliced
8 cups baby spinach, washed
6 oz whipped cream cheese
Saute onions in olive oil. Add spinach and wilt. Add whipped cream cheese and let cream cheese melt. Stir well and heat until warm and bubbly. Serve and enjoy!
