The other day I had a ripe avocado and I didn’t know what to do with it. So naturally, I made a tuna melt. That may seem a little random, but I assure you, it made complete sense to me at the time. Especially since it was lunch time and I also had a can of tuna in the pantry. I’ve been a big fan of mixing my tuna fish with avocado recently. It makes it nice and creamy and you don’t have to use mayonnaise. So I mashed my tuna with my avocado, added a little seasoning, toasted it on an english muffin with some cheese and voila…tuna melt!
Start by placing your tuna fish and avocado in a bowl. Using a fork, mash it together. Add garlic salt, pepper and cayenne pepper (for a little heat).
Add chopped onions.
Spread on an english muffin. Top with cheese.
Place into toaster oven and broil until cheese is melted. Enjoy!
1 ripe avocado
1 can chunk light tuna in water
2 Tablespoons chopped onion
1/2 teaspoon garlic salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
1 english muffin
2 slices provolone cheese
In a small bowl, mash avocado and drained tuna fish. Add garlic salt, pepper and cayenne pepper. Mix to combine. Add chopped onion. Spread tuna mixture on english muffin. Top with provolone cheese and broil in toaster oven until cheese is melted.
