Pimento cheese. What can I say about pimento cheese? It’s a delightful spread or relish that is made of cheese. Also known as the caviar of the South, everyone has their own recipe for pimento cheese. Maybe I’m a good Southerner (or at least Southern Californian) because I have my own recipe for pimento cheese. And I happen to think it’s the BEST.
Pimento cheese can be used in just about anything. It can be used in sandwiches, as a spread, to dip chips or crackers, on hamburgers or hotdogs, or even to add into other dishes such as deviled eggs.
The other day when I was thinking of something I wanted to blog about – I thought about pimento cheese. And then, since I’m slightly obsessed with bacon, I decided to use my pimento cheese to create a delicious grilled pimento cheese with bacon sandwich. Out. Of. This. World.
Start by whipping the cream cheese in your food processor.
Add the cheddar cheese, mayonnaise, pimentos, salt, pepper, garlic powder and paprika.
Combine until creamy and spreadable. You can leave chunks for texture if you desire, but I make mine pretty smooth.
Now for the grilled pimento cheese and bacon sandwich. Butter a slice of bread.
Place it face down in a skillet over medium heat. Spread the other side with pimento cheese.
Add the bacon.
Spread pimento cheese on one side of the other slice of bread.
Place it face down on the bacon. Then butter the top of the bread.
Grill both sides until the cheese is oozy and the bread is brown and crispy. Enjoy!
1/2 cup cream cheese
8 oz shredded sharp cheddar cheese
1/2 cup mayonnaise
4 oz jar diced pimentos
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
2 slices bread
butter for spreading on bread
3 slices bacon – crisp
Start by whipping the cream cheese in the food processor. Add in the cheddar cheese, mayonnaise, pimentos, salt, pepper, garlic powder, and paprika. Blend until smooth and creamy.
For the grilled cheese: Take 2 slices of bread. Butter one and place face down in the skillet. Spread top with pimento cheese. Add bacon. Top with the other slice of bread that has been spread with pimento cheese and butter. Grill over medium heat until the pimento cheese is oozing out and the bread is brown and crispy.
