Short Rib and Stilton Grilled Cheese Sandwich

So the other day I made my Guinness braised beef short ribs.  And of course, I had leftovers.  That’s the thing about short ribs…sometimes (not often) you have leftovers.  I think it’s the nature of the beast.  Or the fact that I made a lot.  Who knows. Either way, normally I can do some serious short rib damage.  That is if I haven’t eaten a lot all day.  And when you’re making them, the house smells ah-maze-ing!

But yes, I did have this problem.  One lonely, leftover, beef short rib.  And since it wasn’t enough to make a whole meal for anyone, there it sat in my refrigerator.   Until I decided to make myself a grilled cheese sandwich for lunch.   You all know how I’ve been on a bit of a grilled cheese bender lately.  Anyways, I happened to have some mango-ginger stilton cheese in the fridge that I thought would go beautifully with my short rib.  So I whipped it right up.  If you can’t find the mango-ginger stilton, any kind of cheese will work…provolone, cheddar, you name it.

Start by making some caramelized onions.  In a medium skillet with 2 Tablespoons butter, saute your onions.


For about 10 minutes, until caramelized.


Then spread butter on one side of each piece of bread.


Place the bread in a skillet, butter side down.  Top with cheese.


Add shredded short rib.


Top with onions.


Add the other slice of bread, butter side up.  Grill both sides until cheese is melted and it is brown and toasted on the outside.

4-6 Tablespoons butter
1/2 onion, sliced
2 slices bread
1 leftover Guinness braised short rib:
3 oz (more or less) sliced mango-ginger stilton cheese (or any other kind of cheese)

In a medium skillet, saute onion in 2 Tablespoons butter.  Cook over low heat for about 10 minutes, until onions are caramelized. Meanwhile, butter two slices of bread.  Place one slice of bread butter side down in a skillet.  Top with cheese and shredded short rib.  Add caramelized onions on top and place the other slice of bread on top, butter side up.  Toast over medium heat on both sides until the outside is brown and crispy and the cheese inside is melted.
