Scotch Eggs with Horseradish-Mustard Dipping Sauce

Maybe I really am as random as KB thinks.  I mean, out of the blue I start to think about something random and then I want to make it.  Like scotch eggs.  Scotch eggs are traditionally a British food and consist of sausage wrapped around a hard boiled egg.  I normally think about sausage and eggs as breakfast.  But I guess scotch eggs are really a “picnic” food.  Either way, probably not the MOST healthy thing you could eat.  But I do believe that anything in moderation is not bad.  So here we go with sausage and hard boiled eggs!  By the way – I made a horseradish/mustard dipping sauce to go along with these that I think added a bit of flair to the dish.  And trust me…one of these is enough!

Start with some sausage and hard-boiled eggs.


Peel the hard boiled eggs.


In a small bowl, mix sausage, shredded cheese and minced garlic.



Once it comes together, divide it into 4 equal patties.


Add a little more shredded cheese (this part can be omitted – but I wanted an ooey gooey scotch egg).


Place the egg on top and wrap the sausage around the egg.  Look at those little nuggets!


Then prepare your egg wash and breadcrumbs.  I seasoned my bread crumbs with garlic powder, salt, pepper, cayenne pepper, thyme and oregano.  But you could also use seasoned bread crumbs…up to you.  For the egg wash, I just beat an egg in a bowl.  Helps the bread crumbs stick to the sausage.


Dip the sausage ball in the egg and roll around to coat.


Then dip the egg-washed sausage ball into breadcrumbs and roll around to coat.


In a hot skillet with a few tablespoons of olive oil, sear the scotch eggs.


Once brown on all sides, pop into a 375 degree oven for about 12 minutes.


While the eggs are baking, combine ingredients for dipping sauce.


Pull the eggs out of the oven and enjoy!





1 lb ground sausage
4 hard boiled eggs
1 cup shredded cheese
2 cloves minced garlic
1 raw egg
1/2 cup breadcrumbs – seasoned with garlic powder, salt, pepper, cayenne pepper, oregano and thyme

Dipping sauce:
1/2 cup sour cream (or greek yogurt)
2 Tablespoons mayonnaise
2 Tablespoons mustard
2 Tablespoons horseradish
1 teaspoon salt
1/2 teaspoon cayenne pepper
dash of worcestercire sauce

Peel hard boiled eggs.  In a mixing bowl, mix the sausage and 1/2 the shredded cheese and the garlic.  Divide evenly into 4 patties.  On top of each patty sprinkle some of the reserved cheese and place an egg.  Cover the sausage around the egg.  Meanwhile, prepare your egg wash and breadcrumbs.  Beat the raw egg in a bowl.  Season your breadcrumbs.  Then dip each sausage covered egg in the egg wash and roll around and then into the bread crumbs and roll around.  Brown the eggs in a hot skillet with a few tablespoons of olive oil.  Then place the skillet into a 375 degree oven to finish cooking for about 12 minutes.  While the eggs are baking, prepare the dipping sauce by mixing all ingredients in a bowl.  Serve and enjoy!
