Lunch time has become the quietest time of my day. I know all that will change once summer vacation rolls around, but for now I use it to my advantage to exercise, run errands, clean house, shower, play catch up at work…and not necessarily in that order! Everything always gets done eventually. And if it doesn’t, then it probably didn’t need doing anyways.
I do like lunch time though even when it’s not quiet. And even when I’m not productive. But, since I work from home, I am usually able to fix myself something yummy for lunch. Like this ranch avocado chicken salad wrap. I had some grilled chicken that I got from the store. I wish I could say I was super woman enough to grill myself some chicken for lunch, but let’s face it, when KB ditched the propane, he made it kind of hard for me to do that. Anyways, I used my grilled chicken, mashed up an avocado, and dashed in a little ranch, rolled it up in a tortilla and called it good! Yummy-good that is!
In a medium bowl, mash avocado. Add diced grilled chicken, diced onion (use green onion if desired), pepper, and ranch dressing.
Mix to combine.
On a medium tortilla, layer tomatoes.
Add chicken salad.
Wrap and eat!
1 small ripe avocado
1 small grilled chicken breast, diced
2 Tablespoons diced onion (white or green)
2 Tablespoons ranch dressing
cracked black pepper (to taste)
medium sized tortillas
In a medium bowl, mash avocado. Add diced onion, diced chicken breast, cracked black pepper, and ranch dressing. Mix to combine. On a medium tortilla, lay sliced tomatoes. Top with the chicken salad. Wrap and eat!
