Mediterranean Hummus Tuna Salad

I’m not usually a big lunch person.  Because 9 times out of 10 I’m running around all day and don’t have a lot of time to fix myself lunch.  Usually I’ll have a shake or a bar and call it a day.  But sometimes I find the time to make myself something healthy and yummy.

I like tuna fish now, but growing up I did not like it.  That’s probably because it was made with a ton of mayonnaise and onions and pickles.  I think the pickles were a little off-putting.  But nowadays I usually will make it with mashed avocado or mustard instead of mayonnaise.  I still add the onions, but that’s just because I like onions.

So the other day, I had some Mediterranean hummus…there were some extra flavors in there, not sure what, but it was good.  And I decided, why not mix some of this in with tuna fish and make a tuna salad?  So that’s what I did.  And I added onions (of course) and cucumbers for crunch.

Mix together can of tuna fish, onions, cucumbers, and hummus.

Drizzle with balsamic vinegar glaze.  You could eat plain like this, on crackers, on toast, in a sandwich.  Enjoy!

Recipe:
1 can tuna fish, drained
2 Tablespoons red onion, minced
1/4 cup cucumber, diced
2 Tablespoons hummus
*balsamic vinegar glaze

Mix all ingredients together and drizzle with balsamic vinegar glaze.  Serve with crackers or on toast.
