Ham and Egg Salad Sandwich

So once a year I serve ham for dinner.  And then I have leftover ham.  Usually for days and I usually never know what to make with it.  And that once a  year is usually on Easter.  And, coincidentally, I also have a bunch of hard boiled eggs on hand.  So this year, I decided to mix the two together in a sandwich the next day.  I know it’s nothing new, but here’s what I did.

Mix everything together in a bowl – chopped ham, diced eggs, chopped onions, mayonnaise, creamy horseradish, honey mustard, salt, pepper, and garlic powder (optional).

It’s nothing pretty to look at.

I served it on a hamburger bun.  Because I could.

Recipe:

1/2 cup diced ham
2-3 Tablespoons diced onions
2 diced hard boiled eggs
2-3 Tablespoons mayonnaise
1 Tablespoon honey mustard
1 teaspoon creamy horseradish
1/2 teaspoon salt
1/2 teaspoon black pepper
dash of garlic powder (optional)

Mix all ingredients together in a bowl.  Serve on bread.
