What’s not to love about cookie butter? I first discovered Trader Joe’s Crunchy Cookie Butter a couple of years ago when I lived in Washington State. When I got the monthly flyer, I thought hmm…I wonder what this tastes like? So I tried it. And I was hooked. I actually had to resort to hiding the jar of cookie butter so I wouldn’t just grab a spoon and have my way with it. And after I hid it, I tried to forget it. But I couldn’t.
Fast forward a few years to living in Connecticut. And my sister gave me a jar of cookie butter for Christmas. Darn her. So I was looking for creative ways to use it so I wouldn’t just grab a spoon again. So I made some granola out of it – http://sweet-carolines.com/breakfast/tropical-cookie-butter-granola/. And then last month I had to go to NYC for a work meeting and they ordered lunch for us. And I had a grilled peanut butter, honey, banana and bacon sandwich. And it was delux. So I said to myself: “Self, I bet that a cookie butter and bacon sandwich would taste pretty good too!” So I made one. And you know what? It was just as good as I had imagined.
So here’s to cookie butter. And bacon. Together in one sandwich.
Start with bread. Butter the outside – since you are going to grill it.
Place face down in a frying pan. Spread cookie butter on the opposite side.
Top with bacon – I used 3 slices crispy.
Top with another piece of bread – spread with cookie butter on the inside and butter on the outside.
Let cook about 5 minutes on each side, or until golden and crispy.
2 slices bread
4-6 Tablespoons crunchy cookie butter
3 slices bacon, crispy
2 Tablespoons butter
Spread butter on two slices of bread. Place one slice face down in frying pan. Spread with cookie butter. Top with bacon. Lay second slice of bread on top with cookie butter on inside and butter on outside. Cook for about 5 minutes on each side over medium heat.
