Grilled Caprese Sandwich

I went on a bit of a grilled cheese bender a little while ago.  All I could think about was grilled cheese and making another one.  I’ve been a huge fan of grilled cheese for most of my life.  And then they came out with that study about people who love grilled cheese.  KB knows what I’m talking about.  Anyhoo.  There’s nothing better then gooey, melted cheese, and a crunchy grilled outside.  Almost nothing better anyways.

So the other day I made a grilled caprese sandwich.  Definitely not a new concept, I’ve seen it done a bazillion ways.  But the point is, I actually had all the ingredients already at home and I was able to whip it up in no time.  I used store bought pesto, and if you don’t have balsamic reduction laying around, you can also make that with balsamic vinegar and it definitely adds a layer of flavor to this sandwich, or you can omit it, makes no difference to me.

Start with two pieces of bread.  Butter one side of each piece.


Place the first piece butter side down in a frying pan.  Spread store-bought pesto on the other side.


Top with fresh mozzarella, sliced tomatoes and sliced onions.


Add more fresh mozzarella on top.


Drizzle with balsamic reduction.  I actually found this in the store already made, but if you want to make your own, simply pour balsamic vinegar in a pot and reduce over low heat until it becomes a thick syrup.


Top with the other piece of buttered bread.  Grill both sides until crispy and the cheese is melted.


Cut in half, serve and enjoy!
