Eggscellent Egg Salad

I always forget about egg salad when I’m making lunches for KB and the kids.  Probably because unless you have boiled eggs sitting around in your refrigerator, it takes a lot of steps to make egg salad.  First you have to boil the eggs and peel them.  And then you have to make the salad.  Nine times out of ten, it’s easier just to make a sandwich with cold cuts.  But in that other time when you just have to have egg salad, it’s actually pretty easy and healthy to make.  I’ve been on a pretty big boiled egg kick.  In fact, I have some boiled eggs in my refrigerator right now for a scotch egg recipe I want to make.  But that’s a different blog post.  Here’s my go-to recipe for eggscellent egg salad.  It has a surprise ingredient.  And if you want to make it healthier, you could take out a yolk or two and bump up the mustard and down the mayonnaise.

Start with some eggs.


Boil and peel.  For perfect hard boiled eggs, I recommend starting them in a pot with cold water.  Once it comes to a boil, boil for 3-5 minutes and then turn off the heat.  Put a lid on the pot and let sit for 10 minutes.  Voila!  Perfect boiled eggs!  Anyways, back to egg salad.


Dice the hard boiled eggs.  I normally just mash with the back of a fork.


Add mayonnaise, honey mustard, salt, pepper, garlic powder, worcestercire sauce (surprise ingredient), minced onion, chives and for a little heat, a dash of cayenne pepper.  The worcestercire sauce adds amazing flavor to your egg salad, although it does change the color slightly.


Mix everything together.


Serve over some sliced bread with lettuce and tomato (if you have it).  Enjoy!



3 hard boiled eggs
1/4 cup mayonnaise (could reduce this and add more mustard if you want to lighten it up)
2 Tablespoons honey mustard (could use any type of mustard)
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 Tablespoon worcestercire sauce
2 Tablespoons minced onion
dash of cayenne pepper (optional)
1 teaspoon chives (optional)

Dice or mash hard boiled eggs in a bowl.  Add all other ingredients and mix.  Serve over sliced bread with lettuce and tomatoes.
