Deluxe Lobster Salad Roll

I’ve got an addiction to lobsters and bacon.  Anyone that’s known me for a substantial period of time can tell you where my weaknesses are.  I’m not gonna lie, when I first found out I was moving to Cleveland, my first thought was, where will I get my lobster roll fix?  I mean, let’s be honest here, lobster is definitely better in the Northeast.  Like Maine.  Or Massachusetts.  Or even Connecticut.  LOL.  Anyways, I figured I would still have access to lobster, but it may not be exactly what I was used to.  And it isn’t.  But it’s still good.

And the combination of lobster salad and bacon?  Forgetaboutit.  I’ve even brainwashed T into liking lobster salad rolls.  And the other day, I added lettuce, green onions and a slice of thick cut bacon.  Let’s just say, we named it the “deluxe lobster salad roll.”  And now I’ll have a hard time getting her to eat it any other way.

Anyways, the lobster salad is pretty easy.  It’s just some really good lobster meat cut up and some Dukes mayonnaise.  I suppose you could use a different kind of mayonnaise, but I’ve gotten used to using Dukes and I tell you, it’s not the same.  It’s better.  So, if you were feeling lazy, like I often times am, you could also buy some pre-made lobster salad from your favorite seafood store.  I do have a favorite seafood store here in Ohio and it’s never let me down.

So really what makes this lobster salad roll great?  Let’s see…

Start by making (or buying) your lobster salad.  Mix lobster and mayonnaise.  Or go to the store.

Then in a medium frying pan, melt your salted butter.  Toasting the buns are so important to a good lobster roll.  Trust me, you don’t want to skip this step.

Add the buns and toast on medium heat until golden brown.

Remove the buns and fry the bacon over medium heat until crispy.

Then assemble your lobster salad roll.  Bun on bottom.  Top with a piece of butter lettuce.  Then add your lobster salad and sprinkle with green onions.  Top with a piece of bacon.

Serve and enjoy!

Recipe:
1 cup lobster meat (diced)
2-3 Tablespoons Dukes mayonnaise
2 hamburger buns
2 Tablespoons salted butter
butter lettuce
green onions (diced)
2 slices thick cut bacon

Start by making your lobster salad.  Mix the lobster meat with the mayonnaise.  You can use more or less mayonnaise to taste.  Then in a medium frying pan over medium heat, melt the butter and toast the buns until golden brown.  Remove from the pan.  Fry the bacon until crispy.  Then build the sandwich.  Bun, lettuce, top with lobster salad and sprinkle of green onions.  Top with a piece of crispy bacon and the top of the bun.

Serve and enjoy!
