Buffalo Chicken Salad Wrap

Lunch time is always the bane of my existence.  I know it shouldn’t be since I work from home, but since LJB is usually with me, it becomes a challenge.  I’ve fallen into the habit of lunch out with a friend a lot more than I probably should, because it’s easier, I know he’ll eat it and let’s face it, sometimes I just like adult company.

My lunch time favorites are sandwiches and salads.  And sometimes a salad-sandwich…like chicken salad or egg salad.  Anyways, the other day I had some leftover rotisserie chicken that I wanted to use.  And LJB and I were home for lunch.  So I made a buffalo chicken salad wrap.  And LJB saw me eating it and demanded a bite.  And LOVED it.  Even though it was spicy and normally he doesn’t go for spicy.

So here’s what I did.  In a medium bowl, add mayonnaise, hot sauce, green onions, chicken breast, pecans, raisins.


Mix until combined.


Take a medium tortilla.  Microwave for about 10 seconds until pliable.  Top with lettuce and chicken salad.  Add crumbled bleu cheese if you have it and if you like it.


Wrap it up and enjoy!



1/4 cup mayonnaise
3 Tablespoons hot sauce
1 green onion
1 cup chopped, cooked chicken breast
2 Tablespoons golden raisins
2 Tablespoons chopped toasted pecans

Combine all ingredients in a medium bowl.  Mix well.  Microwave a tortilla for about 10 seconds.  Top with lettuce and chicken salad.  Wrap and enjoy!
