I love a good egg salad sandwich. I’ve eaten them more often since KB and I started keeping a bowl of hard boiled eggs in the fridge. It makes it so convenient for snacking and also easier to make an egg salad sandwich when the craving arises. So the other day a friend gave me some sweet cherry tomatoes. I thought about tossing them with pasta or making a salad. And then I decided to make a BLT egg salad sandwich. Of course they were good on their own, but as soon as I thought about a BLT, it was all over. And it was super fast and super easy to make…think egg salad with bacon and tomato, served on bread with lettuce. Game over. Here’s what I did.
Crisp bacon in a frying pan. Drain grease and set aside.
Meanwhile, take two hard boiled eggs and peel.
Smash eggs with a fork and add bacon, quartered cherry tomatoes, green onions, mayonnaise, salt and pepper.
Mix well. Taste and adjust seasonings.
Serve on wheat bread with lettuce. Enjoy!
2 strips bacon, diced
2 hard boiled eggs
9 cherry tomatoes, quartered
2 green onions, sliced
2 Tablespoons mayonnaise
salt and pepper to taste
2 slices wheat bread
