BLT Chicken Salad Sandwich

Is there a such a thing as a bacon support group?   I could eat bacon every day.  Granted, I know it wouldn’t be too good for me, but I still can’t resist.  Especially when I’m having a challenging day.  Between work and the tiny humans, let’s face it…sometimes a girl just needs her bacon.  I normally eat bacon for breakfast.  But sometimes I branch out to lunch.  There’s honestly nothing better than a BLT.  Bacon, lettuce, tomato…yummo!   The other day I happened to have some rotisserie chicken that needed using. Sometimes I buy a rotisserie chicken for the convenience – I can use it in salads, casseroles, or just eat it plain.  But when I have a small amount leftover, I usually make it into a chicken salad for lunch.  Now, I like chicken salad as much as the next person, but sometimes I like to get a little creative and the other day, I decided to mix it up a little.  And I made a BLT chicken salad sandwich.  It really hit the spot!  And because there was bacon involved, of course, I loved it even more.

Start by crisping your bacon in a medium skillet over medium heat.  When crispy, drain grease and set aside.

In a medium bowl, mix your ingredients.  Shredded rotisserie chicken breasts, bacon, green onions, tomato, mayonnaise, and a tiny bit of dijon mustard (can be omitted).  Don’t go crazy on the dijon or it will over-power the sandwich.

Take two slices of wheat bread and spread with mayonnaise.  Add lettuce, chicken salad and serve.  Enjoy!

Recipe:

1 rotisserie chicken breast, shredded
2 slices bacon
2 1/2 to 3 Tablespoons mayonnaise
1 teaspoon dijon mustard (can be omitted)
1/2 tomato, diced
2 green onions, diced
4 slices of whole wheat bread
lettuce
mayonnaise

In a medium skillet over medium heat, crisp bacon.  Drain grease and set aside.  In a medium bowl, mix ingredients: chicken, bacon, mayonnaise, mustard, tomato, and green onions.  Lay out bread and spread with mayonnaise.  Add lettuce and chicken salad to the sandwich.

Serve and enjoy!
