BLT Chicken Salad Sandwich

Chicken salad sandwiches are very versatile.  You can add whatever you want, flavor them however you want, and who doesn’t love a good chicken salad sandwich?  I normally don’t order them when I go out to lunch though because you never know how much mayonnaise the restaurant has added to their chicken salad.  I don’t mind a mayonnaise-based chicken salad because it’s creamy, but I like making chicken salad at home because I can figure out how much or how little mayonnaise I want to add.   I don’t mind saying that I make a mean curried chicken salad sandwich…you can find that recipe here:  http://sweet-carolines.com/lunch/curried-chicken-salad-sandwich/

Anyways, lunch time can be fun.  Especially when you take the time to make something instead of just standing in front of the refrigerator or pantry shoving food in your mouth before running off to shuttle the kids somewhere.   The other day I decided to combine my love for BLT’s with my love for chicken salad and make a BLT chicken salad sandwich.  Basically, I added bacon, tomatoes and green onions to my chicken salad and served on bread with lettuce.  I’d make it again in a heartbeat!  I did add some dijon mustard to mine, but you can omit it if you like and be careful not to add too much or it could overpower the other flavors.

Start by cooking your bacon until crispy.

Then mix all ingredients in in a medium bowl: diced chicken, cooked bacon, tomatoes, green onions, mayonnaise and mustard. Salt and pepper to taste.  *Mustard can be omitted – be very careful when adding this.

Serve on wheat bread with lettuce.  Enjoy!

Recipe:

1 cup cooked chicken breast, diced
2 slices bacon, diced
2 green onions, diced
1/2 tomato, diced
3 Tablespoons mayonnaise
*optional: 1 teaspoon dijon mustard
salt and pepper to taste
lettuce
4 slices wheat bread

Cook diced bacon in a medium frying pan over medium heat until crispy.  In a medium bowl, combine chicken, cooked bacon, tomatoes, green onions, mayonnaise and mustard if desired.  Season with salt and pepper.  Serve on wheat bread with lettuce.
