Turkey Sausage Frittata with Sweet Potato Hashbrown Crust

I normally consider myself a good speller.  But I straight up had to Google how to spell frittata correctly in order to write this post.  I mean, there’s so many t’s and so many different combinations of t’s in the word it could make even the best speller insane.  Thank goodness for Google.

Anyways, sometimes I like to make breakfast for dinner.  Normally that involves the b-word (BACON) and some sort of eggs and hash browns or potatoes all greasy and salty and yummy.  Sometimes I’ll make a breakfast sandwich (I make a killer breakfast sandwich with bacon and eggs and cheese on a bagel).  But sometimes, I make something healthy.  Let’s face it, an artery clogging meal shouldn’t be an every day affair.  And KB and I are trying to eat clean right now (no salt, no carbs, low fat, no dairy, no sugar, and no alcohol).  So the other day when we were craving breakfast for dinner, I whipped up this turkey sausage fritttttatttttta that was delish!  And I used sweet potatoes to make a hash brown crust.  AND I made KB grate the sweet potatoes.  One of the things I hate to do the most is use the box grater.  That’s why if I need cheese or potatoes or something shredded I make him do it.  But I digress.  Back to my fritttttata.

Start by sauteing the onions in a little bit of olive oil.


Add turkey sausage and brown.


Add kale and cook until wilted.  Remove from pan and set aside.  Wipe the pan out with a paper towel and place back on the burner.


Add some more olive oil and heat up.  Add shredded sweet potatoes.  Sprinkle with garlic powder and pepper.  Cook for about 5-6 minutes and flip and cook for another 5-6 minutes.  If you don’t flip the potatoes, and cook until crispy, likely you will have a soggy potato crust, which isn’t necessarily bad.


Add the sausage, onion and kale mixture on top of the potatoes.


Crack 10 large eggs into a bowl.


Beat with a fork.


Pour egg mixture on top.  **If I wasn’t eliminating dairy, this is where I would add shredded cheese…………………………


Bake in a 375 degree oven for about 30-35 minutes, until the eggs are set.

2 Tablespoons olive oil
1 medium onion, diced
1 lb turkey sausage, casings removed
1/2 bunch kale, cut into small pieces
2 medium sweet potatoes, peeled and shredded
2 more Tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
10 large eggs

In a medium (oven safe) frying pan, saute onions in olive oil.  Add turkey sausage and brown.  Add kale and cook until kale is wilted.  Remove from pan and set aside.  Wipe pan with a paper towel.  Add more olive oil and heat up.  Place the shredded sweet potatoes in a layer at the bottom of the hot pan.  Sprinkle with garlic powder and black pepper.  Let cook for about 5-6 minutes and then flip and cook for 5-6 more minutes.  Then layer the turkey sausage and kale mixture back into the pan on top of the potatoes.  Meanwhile, crack 10 eggs into a medium bowl.  Beat with a fork or whisk.  Pour the eggs into the pan and place the pan into a 375 degree oven.  Bake for about 30-35 minutes, or until eggs are set.
