Taco Salad

I don’t usually make salad for the fam.  I think it’s because there’s an awful lot of work that goes into making it and usually it’s only KB and me that will eat it.  I mean my kids will eat some of what goes into the salad…except the lettuce.  So there’s that.  BUT I will say that taco salad is usually a hit for dinner.  Including the lettuce.  I think it’s just because I told the kids it’s kind of like a crumbled up taco.  And yes, I add the chips, cheese, salsa and dressing to my taco salad.   What I really like about taco salad is that you can put whatever your heart desires in it.  I even add macaroni noodles to mine.  Whether or not the kids eat around some of the veggies, it doesn’t really matter because it’s a healthy and well-balanced meal.

Start by combining veggies in a large bowl: lettuce, tomatoes, green onions, bell peppers, avocados and black beans.

Meanwhile, brown the ground beef in a medium frying pan over medium heat with a little olive oil.

Drain fat and add taco seasoning.  You can make your own taco seasoning with 1 Tablespoon chili powder, 1 Tablespoon cumin and 1 teaspoon paprika.

Let meat cool to room temperature (or close to it).  Add meat, cooked and cooled macaroni noodles and shredded cheese to the bowl with veggies.

Mix dressing in a small jar: olive oil, vinegar, garlic powder, chili powder, salt, pepper, and cumin.

Add dressing to salad.  Toss to combine well.

Serve with chips and salsa.  Enjoy!

Recipe:
4 cups shredded lettuce
4 green onions, diced
1/2 can black beans, drained and rinsed
1 bell pepper (any color)
1 medium tomato, diced
1 medium avocado, diced
1 lb ground beef
1 packet taco seasoning
2 cups macaroni noodles, cooked and cooled
1 cup shredded cheese

dressing:
1/2 cup olive oil
1/4 cup apple cider vinegar
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon chili powder
1/2 teaspoon cumin

*serve with crumbled tortilla chips and salsa
