Parmesan Crusted Tilapia

It’s always a struggle to get my family to eat fish.  When I first met KB, he was strictly a meat and potatoes guy. But gradually I turned him on to sushi.  Which is weird because he’ll eat raw fish, but when I cook fish, it’s not necessarily his favorite.  Unless it’s in tacos.  Because he loves fish tacos.  So every so often I’ll come up with a new way to cook fish, in which case I’m always a little nervous.  So the other day I ran across this article about new ways to use mayonnaise in cooking.  Which also made me a little nervous, but I thought I’d try it out.  So, I used mayonnaise to adhere some parmesan to some tilapia filets and served it.  Yes, I know it goes against the cardinal rule of cooking seafood with dairy, but heck, I’m a rule breaker, so there you have it!

Start by seasoning the tilapia filet.  I used salt, pepper and smoked paprika.


Then smear mayonnaise on top.


Sprinkle with parmesan.


Place cheese side up in a hot frying pan with a few pats of melted butter.  Cook for about 4 minutes.  Finish in 375 degree oven for about 7 minutes – or when cheese on top is melted and fish is cooked through.

3-4 tilapia filets
1-2 teaspoons salt
1-2 teaspoons pepper
1-2 teaspoons smoked paprika
3-4 Tablespoons mayonnaise
1/3 cup parmesan cheese
2-3 Tablespoons butter

Sprinkle tilapia filets with salt, pepper and smoked paprika.  Then smear liberally with mayonnaise (about 1 Tablespoon per filet).  Sprinkle with parmesan cheese.  In a hot frying pan, melt butter.  Place fish cheese side up.  Cook for about 4 minutes.  Place in 375 degree oven for about 7 more minutes – or until fish is cooked through and cheese is melted.
