Mediterranean Chicken Tacos

I love tacos.  There I said it.  There should be a support group for people like me that love tacos.   We could call it Tacos Anonymous.  Except it wouldn’t really be anonymous.  And we could serve tacos as refreshments.  I mean, if you were to tell me say during the middle of my workout class in the morning that you wanted to me to go with you to get tacos after, I would be hard pressed to find a reason NOT to go.  LOL, you know who you are…

I also like making tacos for dinner because usually I’m able to sneak veggies in where my kids wouldn’t expect it.  And all of a sudden they’ve eaten zucchini or something else they normally wouldn’t try.  So the other day when KB decided he wanted to grill some chicken in the middle of fall/early winter, I decided to make tacos and oven roast some veggies.  Now this was just a spur of the moment idea, but I also had some hummus and feta cheese and I said why the heck not throw it all in a tortilla and call it a taco.  Would’ve been fine in a pita bread too if I’d had that.

So here it is…my take on a Mediterranean chicken taco!  Turned out delicious and even the kids had clean plates!

Start by grilling your chicken (or oven roasting or pan frying).  I seasoned with a little salt, pepper and oregano.  Then oven roast your veggies.  I used zucchini and red onions.  I sliced them, laid them out on a sheet pan, drizzled with olive oil, salt, pepper and balsamic vinegar.  Roast in a 375 degree oven for about 30-40 minutes, until the veggies are cooked.  Dice into smaller pieces and mix in a bowl to top your taco.


Build your taco…here’s what I did…tortilla, hummus, chicken/veggies, top with feta cheese.  But you can build yours however you want!   Enjoy!

zucchini, sliced
red onion, sliced
olive oil
balsamic vinegar
feta cheese
