Lime and Beer Marinated Flank Steak

I love Spring.  I mean who doesn’t?  It’s great to get over the ho-hum winter we’ve had.  Especially up here in the North East.  I really miss Washington State.  The winters were mild and around now, I would get to see all the trees with their blossoms and enjoy My Mountain and a little bit of sunshine.  But I guess it’s all part of the lifestyle, moving on.  And I’m sure there are things I will grow to like about living here.  Or not.  But at least the weather is getting nicer here.

To me nothing screams good weather like some tequila – lime flavored steak on the BBQ grill.  So what I set out to make was exactly that, when I realized I didn’t have any more tequila!  Gasp!  What’s a girl to do with no tequila?  I used beer instead.  And I had KB grill it for me.  And it was pretty good.  I made this to go along with my sour cream rice bake and KB and I devoured it!

Start by making a spice rub mixture – chili powder, cumin, garlic powder, onion powder, crushed red pepper, cayenne pepper, oregano and salt.


Rub it all over both sides of your steak.


Add some lime zest.


Place in ziplock bag.  Add the juice of 2 limes and 1 bottle of beer (I used Corona).


Marinade for at least 2-3 hours, but can be done overnight.  Place on hot BBQ grill and sear both sides.  Cook until the desired amount of done-ness.


Slice and enjoy!



1 – 2 lb flank steak
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon crushed red pepper
1/2 teaspoon cayenne pepper (you can use more if you like spicy – but I was cooking for the kids too)
1/2 teaspoon oregano
1/2 teaspoon salt
2 limes, zest and juice
1 bottle beer

Mix all ingredients except the limes and beer in a small bowl.  Rub on both sides of steak.  Zest the limes onto the steak as well.  Place steak in a ziplock bag, add bottle of beer and juice of 2 limes.  Let marinade for 2-3 hours or overnight.  Grill and enjoy!
