I’m always in search of that one recipe. That one recipe that is not only healthy, but that all four of us will devour. I’m not gonna lie…it’s kind of challenging. I know I can always do some kind of cheesy, carb-laden pasta and it will disappear. But I can’t do that every day or we will be in BIG trouble. I like to try and get fish in the dinner rotation, but I also have a hard time finding a fish recipe that everyone will like. So far, with some success I’ve gotten good at the fish tacos. And 3/4 of us will eat it. But it wasn’t until I saw a picture of this honey-marinated cod that made my mouth water when I found that one recipe. You have to marinate the cod for at least 24 hours, so I made the marinate the night before and let it sit in the refrigerator until the next day when we were ready to eat. It was divine. All four of us were in the Clean Plate Club. It was so good that LJB kept asking for more “pish” and we were all out. Note to self, double the recipe next time since everyone loved it.
Start by making the marinate: mix honey, soy sauce, sesame oil, apple cider vinegar, pepper and fresh ginger.
Put your fish in a ziplock bag or a container with a lid.
Pour marinate over the fish. Let sit at least 24 hours.
Remove fish from marinate and place on a parchment lined baking sheet.
Bake at 450 degrees for about 7-9 minutes.
Serve over rice or with veggies.
