Ginger Beer Pulled Pork with Jalepeno Slaw

Have I said how much I love my crockpot?  Especially during the summer?  The ability to set it and forget it without heating up the entire house.  I’ve had my crockpot since I lived in Alaska.  And that was 13 years ago.  Maybe one day I’ll upgrade.  Maybe not. Either way, at least I know I’ve gotten good use out of it.

So one of my favorite things to make in the crockpot is pulled pork.  I know, it’s not traditional to do it this way.  But at least this way I don’t have to spend hours of time babysitting the meat.  And it turns out tender, juicy, and shreds easily.  Win-win.  Anyways, the other day I ran across this recipe for ginger beer pulled pork.  And since I happened to have a bottle of ginger beer in the fridge, I decided to give it a whirl.  You can find the recipe here:  http://chezus.com/2014/09/09/slaw-topped-pulled-pork-tacos/

I served mine with a jalepeno slaw – really, just a regular coleslaw with a little heat and jalepeno added in.  But let’s start with the pork.

Place pork and onions in the bottom of a slow cooker.  I added some fresh minced garlic for good measure.  Pour in ginger beer.

Meanwhile, in a small bowl, mix together: ketchup, apple cider vinegar, Worcestershire sauce, kosher salt, smoked paprika, pepper, cumin, chipotle chili powder, chili powder, garlic powder and Dijon mustard.

Pour over the top of the pork.

Cover and cook on high for 6-8 hours.

Pull pork out, shred and return to sauce.

Then make the coleslaw.  In the bottom of a medium bowl, add mayonnaise, sugar, vinegar, salt, pepper, crushed red pepper, garlic powder, and cayenne pepper.

Whisk together.  Add coleslaw mix.

Then add cilantro and jalepeno.

Mix to combine.  Eat like this if you want.

Recipe for Jalepeno Slaw:

1 bag coleslaw mix
1 fresh jalepeno, sliced
1/4 cup chopped cilantro
2/3 cup mayonnaise
3 Tablespoons apple cider vinegar
2 Tablespoons sugar
1 teaspoon crushed red pepper
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper

In a medium bowl, whisk together mayonnaise, vinegar, sugar, crushed red pepper, salt, pepper, garlic powder, and cayenne pepper.  Add bag of coleslaw, jalepeno and cilantro.  Mix to combine.  Eat like that or serve on top of pulled pork tacos.
