Down to 11 days before the movers come. And we drive away exactly 2 weeks from Saturday! I am surprisingly on top of this move. I think it helps that I no longer have a one year old and a 3 year old. Oh and also maybe it helps that I was ready to move away when we first got here. Ha ha. Anyways, I’m playing the whole use all the food in the freezer/fridge/pantry that I can before the movers come game. And of course, I had a pot roast the other day that needed using. And a lonely Guinness from when I thought I was making donuts. Chopped up some veggies, threw it all in my handy crock pot and dinner was served!
Start by chopping your onion, celery and carrots. Place in the bowl of a slow cooker.
Top with your beef chuck roast. Sprinkle with salt and pepper. Add fresh thyme if you have it…if not, you can use ground thyme. Add a bottle of Guinness.
Cover and cook on low for 6-8 hours.
Serve and enjoy! (I served mine over egg noodles)
1 large onion, sliced
4 ribs celery, cut into 1/2 inch pieces
4 carrots, peeled and cut into 1/2 inch pieces
1 – 2.5 lb beef chuck roast
1 bottle Guinness stout
salt and pepper (about 1/2 teaspoon each)
fresh thyme sprigs (or ground thyme)
Chop onion, celery and carrots. Place in the bowl of a slow cooker. Lay chuck roast on top. Season with salt and pepper and thyme. Add bottle of Guinness. Cover and cook on low for 6-8 hours. Serve over egg noodles.
