Chicken Fajita Lettuce Wraps

So I’m doing the whole no carb, no salt, no dairy, no alcohol, low fat thing again for the New Year.   So is KB.  We go through it every January after the holidays, to lose some of the fluff.  And I think it’s all about adding flavors and making food that is bold enough where you don’t even miss the unhealthy stuff.  Eating clean.  And eating food that is not normally clean, but preparing it so it is clean is one of those things that helps me.

Take Mexican food for example.  Depending on how you prepare it (oil, salt, cheese, etc), it can be as unhealthy or healthy as you make it.  I made chicken fajita lettuce wraps yesterday for dinner and it turned out delicious!  I served it in butter lettuce with a scoop of guacamole and it was delish!

Start by sauteing your onions and peppers in olive oil.


Add diced boneless, skinless chicken breast.  Cook for about 3-4 minutes.


Add garlic powder, chili powder and cumin.  Mix to combine with seasonings.


Add lime juice and water.  Cover and let simmer for about 8-10 minutes until chicken is cooked and water has reduced.


Uncover and serve.


Eat with butter lettuce for no carbs, or serve with tortillas if you’d like.  Garnish with guacamole and cilantro.



2 Tablespoons olive oil
1 lb boneless, skinless chicken breasts, diced
1 medium onion, sliced
1 red bell pepper, sliced
1 Tablespoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
2 Tablespoons lime juice
1/2 cup water
1 head of butter lettuce or tortillas
cilantro for garnish

In a medium frying pan, saute onions and peppers in olive oil.  Add diced chicken and cook for about 3-4 minutes.   Add garlic powder, chili powder, and cumin.  Mix to combine.  Add lime juice and cover with a lid.  Cook for an additional 8 minutes or until chicken is cooked and water has reduced into a sauce.  Uncover and serve with butter lettuce or tortillas.  Garnish with guacamole and cilantro.
