I wouldn’t say I’m obsessed with avocado toast. Trust me I’ve had it and you won’t hear me complaining. There’s something very comforting about toast…the ultimate carbohydrate as a vehicle for deliciousness. And I always make toast with real butter. Real, salted, butter. Absolutely nothing wrong with that. A crispy piece of bread slathered with salted butter and topped with something…anything you want!
So the other day I made some cheesy mushroom toast for breakfast. Now I know mushrooms aren’t everyone’s thing, BUT I will say that when you cook them in butter with salt, pepper and a little bit of fresh thyme I am sure that may change your opinion of them. It was quick, easy, and delicious. And I added a handful of shredded gruyere cheese to the top for good measure. Yum!
Start by sauteeing the mushrooms over medium heat in a pan with butter, salt, pepper and a little bit of fresh thyme. I used cremini mushrooms (baby bella). You could really use any kind of mushrooms.
Cook for about 7-8 minutes until the mushrooms are cooked and have absorbed the butter and seasonings.
Spoon on top of a piece of buttered toast. Top with shredded gruyere immediately. Serve and enjoy!

Toast bread and spread with butter. Meanwhile, in a medium frying pan over medium heat, saute mushrooms in butter with salt, pepper and fresh thyme (to taste). Cook for about 7-8 minutes until the mushrooms are cooked through and have absorbed all the flavor of the seasonings. Spoon mushrooms over toast and top immediately with gruyere cheese.
Serve and enjoy!
