My children went through a phase when they would only eat quesadillas. It seemed kind of weird to me at the time (to eat the same thing every day), but then again, these are the same children that will eat chicken nuggets for breakfast without a second thought. Quesadillas are really just like grilled cheese sandwiches, just using tortillas instead of bread. And you can add whatever you want to them to make them more interesting!
The other day I had some leftover shredded rotisserie chicken. So I decided to throw together a barbecue chicken quesadilla for lunch. It was super easy and made for a quick and satisfying lunch.
Place a tortilla in a frying pan over medium heat. Layer barbecue sauce, mozzarella cheese, shredded chicken, red onions and corn (optional).
Cook for about 5-6 minutes, until cheese is melty. Fold in half.
Serve and enjoy!
