The Ultimate Grilled Breakfast Sandwich

I love breakfast.  It’s the most important meal of the day and having a good breakfast gets my day off to a good start!  Days like today, when it’s almost spring, but not quite (snow flurries), means its the perfect day to have a friend over and make a decadent breakfast.  One you certainly can’t eat every day.

So I’ve played around with the breakfast sandwich for many years.  And I normally default to the bagel-egg-bacon-cheese that I made in this blog post:  But this morning, I really wanted to try a grilled breakfast sandwich (kind of like a grilled cheese-breakfast burger).  It was amazing and may give my other breakfast sandwich a run for it’s money!  I added avocado, because my friend doesn’t like cheese, so really, you can build this sandwich any way you like.  But here is what I did…

Start by cooking your sausage in a frying pan.  I used a little olive oil, but probably didn’t need to.


Make sure it’s cooked on both sides and completely through.  Takes about 7 minutes over medium heat.  Remove from pan and set aside.


In same pan, crack 2 eggs.  So I have a secret, I actually turned the heat off and cooked the eggs with the heat in the pan.  Eggs cook so quickly and I had some other prep work to do.  This let them cook slowly since it was still on a warm burner and in a warm pan with warm grease.  But you can cook your eggs however you like!


Meanwhile, prep the sandwich.  Butter some bread.  I used a tomato-basil bread that I found in the grocery store.  Any kind will do.


Then, place butter side down in a large skillet.  Add a slice of cheese (if you’re having it).  I would build the whole sandwich before you turn on the burner.


Then top with sliced avocado and sausage patty.


Then add your fried egg and sliced onions.


Top with more cheese and the other slice of buttered bread (butter side up).  Cook over medium-low heat for about 3-4 minutes.


On each side.  Until the cheese is melty and gooey.


Serve and enjoy!


2 sausage patties
1 Tablespoon olive oil
2 eggs
2-4 slices of cheese
4 slices bread
sliced avocado
sliced raw onion

In a medium skillet with olive oil, cook the sausage patties on both sides over medium heat until cooked through, about 7 minutes. Remove from pan and set aside on a paper towel lined plate.  Crack 2 eggs into the same frying pan and cook as desired. Meanwhile, assemble the sandwich.  Butter 4 slices of bread on one side.  Place 2 slices of bread butter side down.  Top with cheese, then avocado, sausage, egg and onion.  Add another slice of cheese and then the other piece of bread, butter side up.  Cook over medium low heat for about 3-4 minutes on each side until the outside is crispy and the inside is all melty and gooey.
