Super Easy Cheesy Breakfast Sliders

Breakfast is my favorite meal of the day.  Absolute favorite, hands down.  So much that I could eat it 3 meals a day.  Although, sometimes it seems like a chore making breakfast for my children before school.  They both usually want different things; one would be satisfied eating waffles or pancakes daily and the other one goes on a dry toast binge quite often.  Me, I’m more of an eggs/bacon, breakfast sandwich, or breakfast burrito type of gal.

So the other day I decided to make these mini breakfast sliders.  I thought it was perfect because who doesn’t like a slider?  They’re small so you can eat one…or…more than one if the mood strikes.  Super easy, super fast and of course nothing original.  I had some King’s Hawaiian Sweet Rolls and sausage patties and made some scrambled eggs.  Voila!  I give you super easy cheesy breakfast sliders.

Start by cooking the sausage in a medium frying pan over medium heat.  Just cook it through, should be about 4 minutes each side (maybe less).

Then in a brand new pan, toast the King’s Hawaiian Sweet Rolls in some salted butter.  Because who doesn’t love a toasted sweet roll?

Meanwhile, crack eggs into a bowl and add chopped chives.  Use a fork (or whisk) to beat the eggs until scrambled.

You can use the same frying pan that you toasted the sweet rolls for this.  Add 2 more Tablespoons of salted butter and melt.  Add eggs and stir slowly until scrambled eggs are cooked.  Season with salt and pepper to taste.

Sprinkle with cheese.

Assemble sliders.  Roll, sausage, cheesy eggs, top roll…need I say more?  Enjoy!

Recipe:

6 small sausage patties
6 King’s Hawaiian Sweet Rolls
4 eggs
2 Tablespoons chives, snipped
4 Tablespoons butter
1/4 cup shredded cheddar cheese
salt and pepper to taste

In a medium frying pan over medium heat, cook sausage patties.  It should take about 4 minutes on each side.  Meanwhile, in another frying pan, melt 2 Tablespoons of butter.  Toast sweet rolls in butter until brown and golden.  Remove from pan.  In a small bowl, crack eggs.  Add snipped chives and using a fork or whisk, scramble the eggs.   Melt more butter in the pan over medium heat.  Add the eggs and using a spoon, stir slowly until scrambled.  Season with salt and pepper to taste.  Sprinkle cheese on top to melt.  Assemble the sliders: roll, sausage, eggs, top of roll.
