Savory Morning Muffins

I’m big into breakfast.  I could eat breakfast for breakfast, lunch, or dinner.  Normally that includes bacon and eggs.  But the other day I decided to go out on a limb and make some savory muffins with ham and cheese and cracked black pepper.  I had already fed my kids breakfast and was trying to kill time until nap time since it was another snow day, so I tried out these muffins.   I took a standard muffin recipe and modified it to be less sweet and then added some ham, cheese, black pepper and green onions.  Of course you could use bacon instead of the ham and if you don’t like green onions, you could leave those out.  And the kids had second breakfast and loved it.  These freeze well, so I have half the recipe in my freezer for the next snow day.  Which is supposed to be today.

In a bowl, combine, flour, pepper, sugar, baking powder, baking soda, salt.


Add eggs, milk and melted butter.


Stir to combine.


Add ham, shredded cheese and green onions.


Stir to combine.


Divide batter into greased or lined muffin tin.  Fill about 3/4 full.


Bake on 375 degrees for about 20 minutes.





2 cups flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon cracked black pepper
1 cup milk
2 eggs
1/3 cup melted butter
1 cup diced ham
1 cup shredded cheddar cheese
1/2 cup green onions

In a mixing bowl, combine flour, sugar, baking powder, baking soda, salt and pepper.  Then add milk, eggs, and melted butter.  Stir to combine.  Add ham, cheese and green onions.  Divide into greased or lined muffin tins – fill about 3/4 full.  Bake at 375 degrees for about 20 minutes.  Enjoy!   Popular variations could be bacon, different types of cheese (I bet goat cheese would be good too), bell peppers, sausage, really any variety of favorite breakfast ingredients would customize these muffins to your liking!
