Sausage Breakfast Sandwich

I love breakfast for dinner.  There, I said it.  It’s out there and I can’t take it back.  I don’t want to take it back, in fact, I embrace it.  If having breakfast for dinner is wrong, I don’t need to be right.  The other day KB suggested I make breakfast for dinner using some of the breakfast sausage we got from the butcher when we bought 1/2 a hog.  So I did it, I made sausage breakfast sandwiches.

I played around with how I cooked the eggs though, normally when I make a breakfast sandwich, I fry the egg.  This time I poached them.  Normally when I poach an egg, I poach it on the stove.  But somehow, somewhere, I got a microwave egg poacher.  Which I thought would make it easy to poach eggs.  And it did.  But I’m not sure I prefer it to regular poached eggs.  Anyways, the concept is the same, heated water, add the egg (salt and pepper) and a dash of vinegar and cook.

The breakfast sandwiches were a hit.  I think I’d go out on a limb and say it was the sausage.  Anyways, mine were simple, but you could change it up as much or as little as you want.

Start by cooking the sausage.

On both sides, over medium heat, until cooked through.

Meanwhile toast your english muffins and poach your eggs.

Then put it all together.  English muffin, sausage (with or without cheese), poached egg, a little bit of raw sweet onions.

Serve and enjoy!

Recipe:

4 breakfast sausage patties
4 english muffins
4 eggs
salt and pepper
4 slices of cheese
raw sweet onions, sliced

In a medium skillet, over medium heat, cook sausage through on both sides.  Poach (or fry eggs).  Toast english muffins and butter both sides.  Then assemble sandwich: english muffin, sausage, cheese, poached egg, onions and top with the other side of the english muffin.

Serve and enjoy!
