I always ask my tiny humans what they want for breakfast first. 8 times out of 10, they want a waffle, toaster pastry, or something sweet. The rest of the time they want “egg sammiches.” Which normally consists of me scrambling some eggs with bacon, adding cheese and putting it between two slices of bread with ketchup. But on a VERY rare occasion, they get breakfast envy. That is to say that I make their breakfast and then I make something for myself and they get envious and usually end up finishing my breakfast by asking for bites every 10 seconds until I give up and give it to them. And people wonder why I’m a fast eater…LOL.
Anyways, the other day I had some avocados and tomatoes, and I thought what about making myself a California Breakfast Sandwich? Now it’s not technically a California – breakfast – sandwich because I am currently living in Connecticut. But really, who would call a beautiful sandwich with fresh avocado and tomato a Connecticut Breakfast Sandwich? I wonder what I would put in a Connecticut Breakfast Sandwich…hmm…
Anyways, this one is simple. More of a “I threw a bunch of ingredients together” type of recipe. At any rate, I made it, the kids loved it so much, I had to make TAB one again this morning which she of course “punished.”
Start by frying an egg in butter. I make my eggs over hard for an egg sandwich, but you could make them over medium or over easy if yolk is your thing.
Add a slice of pepper jack cheese. I told you this one screamed California ingredients to me.
Toast your english muffin. Spread with butter. Layer with sliced onions.
Place the fried egg on the other half of the english muffin.
And you have a sandwich! Enjoy!
1 english muffin, toasted
1 slice pepper jack cheese
Fry your egg in butter. Add slice of pepper jack cheese and let melt. Meanwhile, toast english muffin. Layer with onions, tomatoes, and avocados. Add egg and enjoy your sammich!
