Did you know there’s such a thing as a taco diet? A diet in which you eat only tacos. I think I could be onboard with that. Tacos are seriously my favorite. The kids love them too. Sometimes when I’m making something I don’t think they’ll eat, I put it in a tortilla and tell them it’s tacos. They don’t know any better, so don’t tell them. It’s our little secret. I’ve made curried chicken “tacos”, pot roast “tacos”, black bean and sweet potato “tacos”. I even sometimes add ketchup to their “tacos” for good measure.
But back to my love affair with tacos. I think I like them so much because they’re so versatile. And you really can eat them for any meal. The other day I made some breakfast street tacos. So this came about because I was in the grocery store, buying a package of tortillas and I found this package of cute little tortillas for street tacos. So of course I bought them and then made breakfast street tacos the next day. With a little bit of chorizos and some cheese. A big hit with everyone!
Start by browning the chorizo sausage in a pan with a little bit of olive oil over medium heat.
Meanwhile, crack eggs in bowl.
Using a fork or whisk, beat the eggs until scrambled.
Add to the browned chorizo. Stir gently to cook the eggs.
Until the eggs are cooked. Season with salt and pepper to taste.
Serve in tortilla topped with shredded cheese and green onions. Enjoy!
1 lb chorizo sausage
salt and pepper (to taste)
street taco tortillas (or any kind of tortillas)
In a medium pan over medium heat, brown chorizo sausage with a little bit of olive oil. Meanwhile, crack eggs in a bowl and beat with fork or whisk until scrambled. When the chorizo sausage is browned, add eggs and continue to cook, stirring gently until the eggs are done. Season with salt and pepper. Serve in tortilla shells topped with shredded cheese and green onions.
