Breakfast Ramen

Breakfast is the most important meal of the day…or so they say!  And I am a big believer in breakfast.  Especially breakfast ramen.  I can’t claim credit for this – I saw a video on the internet for breakfast ramen and of course I wanted to try.  I used to eat a lot of ramen back when I was on the boat.  It was cheap, fast, and would last forever in my pantry.  The way I used to make ramen was with very little water (so it didn’t turn soupy), an egg and sesame oil.  I don’t usually use the seasoning packet in the ramen (although I hear it’s a hot commodity on Orange is the New Black).

Anyways, I saw this video (I think it was on FoodBeast) for breakfast ramen which had eggs, cheese and bacon.  And it was served with a little sriracha sauce.  So I made it!  Here’s what I did:

Cook bacon in a frying pan.

Meanwhile, cook ramen noodles.

In a medium bowl, crack 3 eggs.  Scramble with a fork.

Add cheese.

Mix to combine.

In the frying pan with bacon, add cooked ramen noodles.

Then add eggs and cheese.

Cook for about 5 minutes, mixing thoroughly until eggs are cooked and cheese is melted.

Garnish with green onions and sriracha.  Serve and enjoy!

Recipe:
2 packages instant ramen
4 strips of bacon, diced
3 eggs
1 cup monterey jack cheese, shredded
green onions
sriracha sauce

In a medium frying pan, cook diced bacon.  Meanwhile, cook ramen noodles in boiling water and drain.  In a medium bowl, crack 3 eggs. Scramble with a fork.  Add shredded cheese and mix to combine.  Add cooked ramen noodles to frying pan with bacon.  Add eggs and cheese.  Cook for about 5 minutes, until eggs are cooked and cheese is melted.  Serve with green onions and sriracha sauce.
