Remember how I went on a grilled cheese bender a few months ago? I mean, can you blame a girl? Carbs…cheese…what’s not to love about a grilled cheese? So the other day I saw a picture/video of a BLT grilled cheese which made me drool…which meant (of course) I had to make one. I didn’t really follow the video, just made my own BLT, added some pepper jack cheese and grilled it. To-die-for. Here’s what I did.
Cook your bacon in a medium skillet over medium heat until crispy.
Meanwhile, butter your bread. I used the tomato basil bread from Panera.
Place face down in a skillet. Top with mayonnaise and a slice of pepper jack cheese.
Then add sliced tomatoes.
And lettuce. I used a spring green mix.
Add cooked bacon.
Top with another slice of cheese and another slice of bread with mayonnaise on the inside and butter on the outside.
Grill on both sides until brown and crispy and the cheese has melted. Serve and enjoy!

2 slices of bacon
2 slices pepper jack cheese
In a medium frying pan over medium heat, cook bacon until crispy. Meanwhile, spread butter on one side of the bread. Place face down in another medium frying pan. Top with mayonnaise and sliced pepper jack cheese. You can use any kind of bread and any kind of cheese. Then add sliced tomatoes and lettuce. Top with bacon, another slice of cheese and another slice of bread with mayonnaise on the inside of the sandwich and butter on the outside of the sandwich. Grill over medium heat until brown and crispy on the outside and the cheese is melted on the inside.
Serve and enjoy!
