Bacon Breakfast Ring

Breakfast is my favorite meal of the day.  If I had to skip one meal it would probably be lunch.  Of course there’s nothing better than a combination of the two – brunch, but I digress.  Back to breakfast.  I think I like breakfast so much because I love bacon.  I could never be a vegetarian because I love bacon so much.  I could be a bacon-a-tarian, I think.  Is that even a thing?  I would imagine it to be something like a vegetarian that eats bacon?

Anyways, I have a usual when I cook breakfast – either breakfast sandwiches (egg, cheese, bacon on a bagel or english muffin with some onions) or cheesy eggs – scrambled eggs with a bunch of bacon, veggies and cheese melted on top.  So often times, I want to mix it up and the other day, I made this breakfast ring which includes…you guessed it…bacon.  Also, biscuits, onions and cheese.  Baked it in the oven and the munchkins devoured it.  I think it’s pretty similar to a savory monkey bread.

Start with a bundt pan and about 1/4 cup of butter.  Place in a 375 degree oven for the butter to melt.


Meanwhile, in a frying pan, crisp your bacon.  Drain on some paper towels.


In a bowl, beat 2 eggs, milk and pepper (garlic powder if you desire).


Add cheese, green onions and crispy bacon.


Cut refrigerated biscuits into quarters.  Add to the bowl.


Using your hands, toss the mixture to ensure biscuits are coated with the egg mixture and the cheese, onions and bacon is evenly distributed.


Spread into bundt pan with melted butter.


Bake at 375 degrees for about 20-25 minutes until biscuits are brown and cooked-through.


Turn out onto a plate and enjoy!



1/4 cup butter
1 tube refrigerated biscuits
4 strips of bacon, diced
2 green onions, diced
2 eggs
1/3 cup milk
1 cup shredded cheddar cheese
1/2 teaspoon pepper

Place butter into a bundt pan and put bundt pan in 375 degree oven to melt the butter.  Meanwhile, crisp the bacon in a frying pan.  In a medium bowl, beat eggs, milk and pepper.  You could add a pinch of garlic powder if you desire.  Add the cheese, green onions and bacon and mix to combine.  Cut the biscuits into 4 pieces each.  Add to the milk, cheese, onion and bacon mixture.  Using your hands, toss the biscuits to ensure they are coated and the bacon, onions and cheese are evenly distributed.  Spread into bundt pan with butter and bake at 375 degrees for 20-25 minutes until the biscuits are browned and cooked through.  Turn out onto a plate and serve.
