Caprese Salad

I love caprese salad.  I think it’s because it looks beautiful and tastes amazing.  It’s that one dish that I order in an Italian restaurant and pay an arm and a leg for, but I never think to make it at home.  It’s super easy because it only has a handful of ingredients.  And if you use really fresh ingredients, it tastes even better.  So the other day, I had some gorgeous tomatoes.  And since I had those tomatoes, I thought about caprese salad.  So of course I went out to get the ingredients to make it for lunch.

And since it’s now fall, and my garden is long gone, I had to buy some fresh basil.  The supermarket I went to didn’t have any fresh basil.  BUT they did have a basil plant.  Which I bought and now I am the proud owner of an indoor potted basil plant.  I figured I could either pay $4.99 for a basil plant and use it multiple times or pay $2.99 for a container of fresh basil that I would use once or twice and then throw away.

I’ll tell you what made this salad even easier.  I had some store-bought balsamic reduction.  Which of course you could make your own reduction.  Or even just use balsamic vinegar.   Your salad…your preference.  If you want to make your own balsamic reduction, simply simmer balsamic vinegar over medium-low heat until it becomes thick and syrupy.  It won’t take long and the results are amazing!

Anyways, all you have to do is layer your ingredients.  Tomato, fresh mozzarella, drizzle with balsamic reduction, olive oil, salt and pepper.  Sprinkle shredded fresh basil over the top.
