So I bought some frozen edamame at Costco the other day. And I normally just nuke it in the microwave so it’s warm and eat it as a healthy snack. But this time I decided to try something else. I decided since oven roasting with balsamic has become one of my favorite ways to cook vegetables, I would try it with the edamame. Now obviously its debatable that the flavor of the balsamic will come through to the actual part that you eat, but it was still tasty and I thought oven roasting with balsamic I could still taste the balsamic.
All I did was lay out the frozen edamame in a pan. Drizzle with olive oil and balsamic vinegar. Sprinkle with a little sea salt. Roast in an 375 degree oven for about 20-25 minutes.
