Every once in a while, I find myself in the predicament of trying to use up something I bought on a whim that is about to go bad. Like the 3 lbs of avocados I bought at Costco because I was craving (1) avocado. And then I only used 1, and had a whole bag that just sat in the refrigerator for days. Let’s face it, I’m a horrible Costco shopper. I impulse shop there and if it’s not something the whole family likes or uses frequently, it will go bad. Or I’ll make random stuff to use it up. Like these cream cheese-avocado rolls that I made for LJB and me for lunch the other day since I had 3 avocados left from that bag.
I started like I start all good recipes – with some bacon. I thought it would add some texture to what could otherwise be mushy.
Mashed the avocado in a bowl.
Mixed in cream cheese, tomato, crispy bacon, green onions, salt, pepper, garlic powder, dash of hot sauce.
Spread on a tortilla.
Roll up like a burrito.
Slice and serve.
3 strips of bacon – diced and fried until crisp.
1 medium avocado
4 oz cream cheese
1 tomato, diced
2 green onions, diced
salt and pepper (to taste)
1/4 teaspoon garlic powder or salt
dash of hot sauce
3 small to medium tortillas
In a saute pan, fry bacon until crisp. Meanwhile, in a small bowl, mash avocado. Mix in cream cheese until smooth. Add remainder of ingredients (except tortillas) and mix to combine. Spread on tortillas. Roll up – burrito style. Slice and serve. These are good refrigerated too.
